While this might be the first you’ve ever heard of it, it’s actually not new — it’s a variation of a traditional Japanese dish that people have been eating for years. But this exact Raindrop Cake is from NYC-based chef Darren Wong, who explains, “It’s a light, delicate, and refreshing raindrop made for your mouth.”

Your ingredient list is pretty simple, and can be modified.
Ingredients for 10 servings
8 cups cold water
2 ¾ teaspoons Japanese agar agar powder
1 tablespoon ultra-fine baker’s sugar
BROWN SUGAR SYRUP (Now you have added some calories)
2 cups golden brown sugar
1 cup water
TOPPING : soybean flour, roasted
